best non cloud thermostats with hardwired remote sensors

I'm looking for a basic HVAC thermostat that prioritizes my home theater's temperature via a remote sensor rather than its own internal one. My main difficulties are that I want no cloud access for security and no battery changes for the sensor (hardwired preferred).
I’m thinking about using Home Assistant with a Z-Wave Honeywell T6 and a USB thermometer, but that feels overkll for a simple goal, right?
I'm worried about whether the thermostat will display the theater's temperature and if HA or the thermostat itself would ultimately control the HVAC logic.
is there a simple DIYfriendly solution that keeps things local and hardwired without the Home Assistant headache?

One option I’ve seen people use is Venstar style setups with wired 10k remote sensors where the thermostat can read one sensor, or average multiple sensors. I haven’t run it personally, but it seems closer to your “no cloud, no batteries, just works” vibe than trying to bolt sensors into HA.

OP, if you want to skip the Home Assistant headache entirely, look for a Honeywell T6 Pro, nonWiFi version. it has terminals (S1 and S2) specifically for a wired indoor remote sensor (C7189U)
it’s completely local, hardwired for power, and you can menu-dive into the installer settings to tell the thermostat to only use the remote sensor for its logic. No apps, no hubs, just a rock solid wired connection

Quick questions so we do not recommend the wrong direction. What HVAC system is this, single stage furnace and AC, heat pump, multi stage, or zoning? And do you want the thermostat to control based only on the theater sensor, or average theater plus hallway? A lot of thermostats can do averaging but not true priority control unless you pick the right model.
